Fabada Asturiana is a traditional bean stew originating in the Asturia region of Spain. Due to its popularity, it is now served all over Spain and enjoyed by many people around the world. Fabada Asturiana is made with large white beans called fabes. The beans are cooked until tender, then spicy chorizo is added with pork belly (alternative recipes also use pancetta for extra flavor), and finally, towards the end of cooking, blood sausage is added until hot.
