The elver is a baby eel that lives in the Sargasso Sea. This is where the eels spawn, and their roe is carried by the currents until it reaches the mouths of European rivers as young eels. Agromar provides you this highly regarded product with a careful preparation technique that is obviously aimed at the gourmet market.

The most significant advantage of Agromar’s eel is that it is a genuine eel, not a replacement like gulas. It is a very uncommon and difficult to obtain commodity, although they appear in the absence of fresh eels. Agromar’s Angulas are presented in a delicate and straightforward manner. Cooked with simply water and salt, then topped with olive oil and chili before being canned.

Angulas is eaten on its own since it is already flavorful. The appropriate wine paring partner would be the Mar de Frades Albarino Atlantico Rias Baixas 2019, a white wine with a fresh clear flavor that is as delicate as the precious young eels.

Angulas aren’t always available and aren’t something you can obtain straight immediately. Even in Spain, they are considered a delicacy. Angulas are fished in Northern Spain throughout the winter and are connected with Christmas as a delicacy to be eaten on special occasions.

Storage Instructions

Store your tin/jar in a cool, dark, and dry pantry. Unopened, it will last up to 2 years. Once opened, consume your preserved fish/meat within one or two days and keep left­overs with the oil in a sealed con­tain­er in the fridge.
