Embutidos Arbizu is an artisanal producer of finely cured and semi-cured meats. The company, as its name suggests, is located in the small municipality of Arbizu, found in the province of Navarre, Northern Spain. They adhere to strict tenets of quality and innovation.
The Arbizu Panceta Adobada is a wonderful creation. The fatty part of the pork is used, and is rubbed in salt. It is then left for three days in order to infuse saltiness into the meat, but also to begin removing excess water and moisture that could potentially dilute the intense pork flavor. Afterwhich the salt is removed, and the pork is then marinated in a spicy mixture that features copious amounts of paprika and garlic, as well as other spices.
This delicious panceta is perfect as part of salads and sandwiches. It can also be a great replacement for bacon, or can simply be enjoyed on its own.
