Quite a popular wine in Spain, the Bagoa Do Miño Albariño has green fruit notes as well as a nose of some tropical fruit notes and white flowers. The Bagoa Do Miño Albariño pairs well with a number of seafood dishes like Ceviche. Using about a pound of cubed skinless, boneless snapper, halibut or bass, combine in a bowl with 1 ½ cups of lime juice and a chopped medium onion. Cover this and refrigerate for four hours, or until the fish no longer looks raw when cracked open. Drain once it reaches this state. In another bowl, mix together 2 medium chopped tomatoes, ⅓ cup chopped cilantro, 2-3 chopped green chilis (serrano or jalapeno peppers), olives and olive oil. Combine with the fish and stir in about 3 tbsps of fresh orange juice. Season with salt and freshly cracked black pepper. Serve immediately with a glass of Bagoa Do Miño Albariño and enjoy!
