SAVORING THE GREENS: A SILKY SWEET PEA & MINT SOUP

There’s something poetic about a bowl of vibrant green soup. It feels like a fresh start, especially when you’re using high-quality ingredients like Leyenda Extra Fine Sweet Peas. These aren’t your average mushy canned peas; they are harvested at their peak, preserved in a delicate brine that maintains their snap and natural sweetness.

This recipe elevates the humble pea into a gourmet starter or a light, sophisticated lunch.

The Recipe: Silky Leyenda Pea & Leek Velouté

Prep time: 10 mins | Cook time: 15 mins | Serves: 4

Ingredients:

  • 2 jars (approx. 660g) Leyenda Extra Fine Sweet Peas, drained and rinsed.
  • 2 large leeks (white and light green parts only), finely sliced.
  • 1 tbsp unsalted butter (or extra virgin olive oil).
  • 500ml vegetable or light chicken stock.
  • A handful of fresh mint leaves.
  • 100ml heavy cream (optional, for extra silkiness).
  • Salt and white pepper to taste.

Instructions:

  1. Sauté: In a large pot, melt the butter over medium heat. Add the sliced leeks and a pinch of salt. Cook gently for about 5 minutes until soft and translucent—don’t let them brown!
  2. Simmer: Add the drained Leyenda Sweet Peasand the stock. Bring to a gentle simmer for 5–7 minutes. Since these peas are already tender, you’re just marrying the flavors.
  3. Blend: Stir in the fresh mint. Use an immersion blender (or transfer to a stand blender) and process until completely smooth.
  4. Finish: Stir in the cream if using, and season with salt and white pepper.
  5. Serve: Garnish with a few whole peas you’ve set aside, a drizzle of olive oil, and a sprig of mint.
