The Recipe: Silky Leyenda Pea & Leek Velouté

Ingredients:
- 2 jars (approx. 660g) Leyenda Extra Fine Sweet Peas, drained and rinsed.
- 2 large leeks (white and light green parts only), finely sliced.
- 1 tbsp unsalted butter (or extra virgin olive oil).
- 500ml vegetable or light chicken stock.
- A handful of fresh mint leaves.
- 100ml heavy cream (optional, for extra silkiness).
- Salt and white pepper to taste.
Instructions:
- Sauté: In a large pot, melt the butter over medium heat. Add the sliced leeks and a pinch of salt. Cook gently for about 5 minutes until soft and translucent—don’t let them brown!
