Cambozola is simply the marriage of camembert with gorgonzola. Upon inspection, one will be greeted with a soft cheese that looks exactly like a small wheel of camembert. But that is where the similarities end. Upon cutting into the cheese, the first thing that one will notice are the beautiful blue veins running through the cheese. The interior is slightly more yellow than camembert as well. However, this cheese is not as pungent as gorgonzola. It is soft, subtle, and silky smooth - like camembert, but also features the slightly pungent notes associated with gorgonzola.
