Brie is probably one of the most well-loved cheeses around the world. Originally created in the area of Meaux and Melun, 35 miles east of Paris, this wonderful cheese has become a staple in pantries all around the world.
Brie is a subtle, soft cheese, with a firm rind of Penicillium Candida which is completely edible. The bouquet of the cheese is milky, with strong notes of dairy, grass, and a slight acidity from the subtle lactic nature of the cheese. Its palate is equally subtle, with a slight acidity shining through thanks to the rind of the cheese. It promotes a subtle nuttiness intermingled with an earthy grass flavor thanks to the diet of the cows.
Brie is extremely versatile. One can see parts of it in nearly any course of a meal, ranging from appetizers all the way to desserts. It is equally enjoyable to eat it on its own, or as part of a sandwich, but make sure not to overpower the flavor or you’ll miss out on the magic that makes brie one of the most popular cheeses in the world.
