West Country Farmhouse Cheddars are given a particular 'cave-aging' procedure to give them their distinct flavor and character.

The Wookey Hole West Country Farmhouse Cave Aged Cheddar is very special. Certified PDO (Protected Designation of Origin accreditation), this cheese’s texture is firm, and the color is cream. The perfume is a fascinating combination of sweet, creamy, farmy, and earthy notes. The flavors are bold, strong, and well-balanced, with contrasting elements like sweet and salty or earthy and sour. The Caves’ environment imparts a further, unique, earthy and nutty flavor to the cheddar.

This cheddar is hand-carried two hundred feet below into the Wookey Hole Caves in the Mendip Hills to mature. The Caves’ consistent temperature and humidity provide perfect circumstances for storing and maturing cheddar, and the porous structure of the cheese allows it to absorb the particular earthy and nutty flavors of the environment.

The rich, sweet, and nutty qualities of Wookey Hole Cave Farmhouse Cave Aged Cheddar pairs exceptionally well with full-bodied, flavorful red wines. Try a classic Bordeaux Claret, such as Chateau Noaillac AC Medoc, or a South African Cabernet Sauvignon, such as The Visionnaire, Holden Manz from Franschhoek.

Storage Instructions

Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. Soft cheeses with delicate rinds need to breathe, so they are best placed in glass containers lined with paper towels to absorb extra moisture. Leave the lid open a tiny bit for air to circulate and don’t forget to write up a label with the date you first opened the package. Kindly pay attention to the best before date label when you receive your cheese. Consume prior to date indicated.
