Amontillado is a variation of sherry that is darker than Fino, but lighter than Oloroso. It is distinct in its nutty aromas, tobacco, aromatic herbs and often ethereal, polished notes of oak.
The amontillado offers a beautiful amber color, reminiscent of tree sap as it works its way slowly down the trunk of a tree. It is smokey on the nose, with notes of smoked tree bark mingling with dried fruits. On the palate, it is a little sweet, but not overpoweringly so. Notes of wood and smoke are also pleasant that mix with a satisfyingly sweet aftertaste. It produces a long-finish and is easy to enjoy.
Due to the lightness of this amontillado, it is easy to pair with dishes like pork or rabbit. It was also traditionally served with thin soups, such as beef consomme. The sherry works well as an aperitif, getting the mouth juices flowing in anticipation of the delicious meal to come.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
