The exceptional Simonsig Cuvée Royal is made from just the best Chardonnay grapes cultivated on the finest Stellenbosch soils. Only the best cuvée comes from gentle whole bunch pressing. To maintain freshness and primary fruit, primary fermentation took place in a stainless-steel tank. There is no malolactic fermentation. The wine is bottled to complete the second fermentation and matured for at least three years on the lees.
The Cuvée Royal by Simonsig has an extraordinarily fine mousse and a delicate straw color. Layers of stone fruits, apples, and freshly baked bread complement the refreshing fragrances of lemon and lime flowers. The aromas are enhanced by a delicate and precise palate that adds minerality and yeasty depth.
Light delicate dishes like fish, shellfish, crayfish, caviar, or artichoke hearts are wonderful served with lively wines like the Simonsig Cuvée Royal. And of course, fresh, succulent oysters are a must. The Cuvée Royal also pairs well with fresh desserts like fruit salad or sorbets at the end of a meal. Don’t overchill; serve at 6–8°C.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
