Jean Brunet's firm, based in the High Pyrenees, produces high-quality pâtés, terrines, and other speciality meat products. To maintain their natural flavor, their goods are devoid of both coloring chemicals and preservatives.

The robust, nutty, and rich flavors of wild boar meat shine through in this pâté. Known for their duck and goose products, Jean Brunet has expanded to manufacture terrines, confits, and pâtés from a variety of local meats. The gamey flavor of this wild boar confit is balanced by a mixture of the considerably softer flavor of prime slices of domestic pig. The application of a spice blend enhances the strong tastes.

Anything containing wild boar needs similarly strong or sweet tastes. Pour a glass of Syrah, Cabernet, Beaujolais—Cru version—or a full-bodied Pinot Noir to pair with helpings of this pâté over toasted baguette pieces. A Viognier, with honey and peach aromas, is an excellent choice for white wine fans. We also propose sliced cantaloupe and a great aged Cheddar.

Brunet, a charcuterie and cured meat firm, was founded in 1985, but it wasn’t until Jean Brunet, a scion of this family, took on the business of creating pâtés and terrines in 1962. Traditional processes continue to drive the firm today, with formulas established and tested over the previous half-century. They specialize in a wide variety of pork-based blocks, poultry, and game, all of which are manufactured without preservatives to meet their brand’s high standards.

Storage Instructions

Store unopened containers of pâté in a cool, dry pantry. Once opened, pâté will keep three to four days in the refrigerator. It can also be frozen for up to two months, though we recommend you consume it as soon as possible!
