Hailing from France, the Boccardo Au Poivre is an artisanal pressed cheese that has been matured between eight and sixteen weeks. It is mellow yet has its distinct peppery notes. This cheese is creamy and complex with kicks of peppercorn that give it more character.
Making cheese the artisanal and traditional way, the Baechler Fromagerie has over four generations of history and tradition under its belt. It has been around since 1860 and continues its legacy by producing high quality dairy products such as the Boccardo Au Poivre. Found in the Lot et Garonne, a part of southwestern France, it is produced in the Broc Estate.
The Boccardo Au Poivre is a savory delight if you are particularly fond of the mild heat and kick that peppercorn has to offer. This savory cheese is best paired with a glass of white wine, perhaps a Riesling with its citrusy notes to cut through the spice and richness of the cheese.
Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. Soft cheeses with delicate rinds need to breathe, so they are best placed in glass containers lined with paper towels to absorb extra moisture. Leave the lid open a tiny bit for air to circulate and don’t forget to write up a label with the date you first opened the package.
