Cazuelas are glazed clay cooking plates (also referred to as terra cotta dishes) that may be used in the microwave, oven, or grill. (As they can break, we do not recommend using them on the burner.) They come in a variety of sizes and forms, but are typically shallow and spherical.
You can use a cazuela in place of a skillet, a paella pan (a paella becomes “rice cazuela”), a sauté pan, an oven casserole. Earthenware retains a gradual, constant heat, enabling for the gentle, uniform cooking of food. Because earthenware retains heat, food continues to cook after being removed from the stove.
Store in a dry place.
