The Château Haut Terrasson Bordeaux Moelleux is a wine that will transport the drinker to a cafe in the French countryside on a balmy summer afternoon. Produced in the Bordeaux region of France, the vineyard is planted on slopes overlooking the Garonne River valley. This particular wine is a combination of 85% Sémillon, and 15% Sauvignon. The grapes are picked at their sweetest and fermented using this natural sugar. Part of the sugar from the grapes is used as food for the yeast during the fermentation process, while the remainder is left in the mixture to ensure a wonderfully sweet wine experience.
It’s this sweetness that lends to the boldness of its flavor - but not cloyingly so. It is quite a sweet wine with very soft flavors. To the eye: this wine has a beautiful, almost brilliant, yellow color. Very much reminiscent of a hot afternoon in the French countryside. Hay-like. On the nose: strong notes of white flowers, peaches, and apricots. It has a wonderful bouquet that will leave you wanting to inhale more of the delectable aromas. On the palate: a very light mouthfeel with a hint of acidity in the aftertaste. A very fruity, sweet wine that is easy to drink, especially on a hot day.
This wine, due to its sweetness, works very well as a dessert wine, but is also paired well with light, spicy dishes. If you’re looking for something out of the box, adobo sa gata is a good choice for this. The spiciness of the green chilis mixed wit the coconut milk, and the mildness of the chicken will be complemented well by the sweetness and fruitiness of the wine. Just make sure the sauce has no added sweetness to it (like sugar) or it will become cloying.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
