The Les Jamelles Sauvignon Blanc is a dry, fragrant wine with a refreshing finish. The grapes (100% Sauvignon Blanc) are picked very early in the morning, sometimes even before sunrise, and are quickly brought to the winery to be pressed. Alcoholic fermentation occurs speedily in stainless steel containers at precisely controlled temperatures, with no air contact.
It only takes a few months to age fine lees at low temperatures in a carbonic atmosphere. Malolactic fermentation is not used; thus, the wine retains all of its freshness. This wine won Gold at the Sakura Japan Women’s Wine Awards 2022.
Les Jamelles Sauvignon Blanc has a wonderful pale color and is crisp and aromatic, with notes of passion fruit, wild strawberry, citrus, and vegetal flavors like green tomato. It also has flowery honeysuckle notes and a flinty gritty fragrance. It’s quite fresh and mineral on the tongue, with a nice acidity, and a pleasant astringency on the finish.
As an aperitif, serve chilled with shellfish or summery dishes. It goes well with sea bream ceviche, a shrimp, grapefruit, and avocado salad, or grilled cod with a citrus sauce.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
