What is turron de Jijona? Simply put, it is a delicious mix of almonds and honey presented in a pleasantly soft bar. It is easy to eat and will tantalize the taste buds, the nose, and the eyes. Unlike its harder cousin, the turron de Jijona is very soft. It is easy to eat and heavy notes of nuts and honey will shine through vigorously.
So what is the difference between nougat and turron? Nougat is actually of French origin and does not bear the seal of approval of the Council of Turron. Turron on the other hand, while similar to nougat in texture, is protected by the Regulatory Council of Turron. The recipes are a closely guarded secret utilizing special ingredients only obtained from these protected areas.
Turron, especially soft turron, is best eaten as a dessert course or as a garnish to a rather epic dessert. It is best consumed on its own with a nice glass of Sherry, or a strong cup of coffee.
