The Champagne Mailly Grand Cru Brut Reserve is prepared from Pinot Noir and Chardonnay grapes fermented in stainless steel tanks and barrels with temperature control. It has a golden hue and an alcohol content of 12.5 percent. On the nose, it is rich and juicy, with citrus and softly toasted bread characteristics. On the tongue, it is clean, full-bodied, and well-balanced, with aromas of freshly buttered bread and a lengthy finish.
Champagne Mailly’s Grand Cru Brut Reserve is the ideal aperitif. It pairs well with drinks and cheese plates. It pairs wonderfully with Chaource cheese. It pairs nicely with chicken and turkey meals and is delicious with apple pie for dessert.
Champagne Mailly is among the earliest Champagne cooperatives, having been created in 1929. It was an initiative by twenty-four local grape producers who had only established vines in Mailly Champagne to gain higher rates for the wines they sold to Champagne companies.
After purchasing property at the entrance to Mailly, they erected a big structure for a wine press and vat room, with the intention of installing modern equipment. However, the Champagne Houses were not as responsive as they had planned, with price increases being a prominent factor. So, this cooperative had no business for the first two years. They did not, however, give up.
Even without financial backing, assistance, or facilities, they chose to produce and sell their own Champagne wines. They utilized recyclable bottles and hired the necessary equipment. They achieved success by making 3,600 bottles of Champagne Mailly. All of the bottles were sold to a single customer, and with the proceeds they re-invested in their business and began their second bottling. As the saying goes, the rest is history.
Fine sparkling wine must be handled with care. For short-term storage (a few days to a month), you can keep your bottle upright—but away from bright or artificial light. For long-term storage, especially for vintage cuvées, you must store the bottles on their side in a wine rack or cellar to keep the cork from drying out. The ideal temperature for storage is between 7 to 10°C. Once opened, a bottle will be good for 1 to 3 days standing upright in the refrigerator.
