Sherry is one of those special things that the world would be a little darker without. It is made from green grapes only and is made from only 3 grape varieties Palomino, Moscatel and Pedro Ximenez (PX). For the Eminencia, Pedro Ximenez grapes have been used. The grapes are allowed to mature and dry on vines, before being carefully picked and squeezed of their juices, skins, and seeds. The resulting must is fermented alongside a spirit before being aged in sherry casks.
The Eminencia is the perfect dessert wine. It is bold, sweet, and quite soft. To the eye: it offers a uniquely dark mahogany - almost Ebony - color that is most pleasing to view. On the nose: deep, dark notes of raising, dried plums, and spices are detected. On the palate: imagine rolling liquid silk on your tongue, and that sort-of closely resembles the feel of this fortified wine. It is soft, bold, and sweet. It is pleasing and promotes a long finish.
This Sherry pairs perfectly as a dessert wine or simply as a digestif. After a large meal, the warmth of the sherry will definitely aid in digestion.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
