The Artequeso Buenalba Queso Oveja Semicurado with Pimenton is a wonderful cheese produced with raw sheep’s milk, procured from the sheep located on the Artequeso farm in Tembleque, a small municipality in Spain. Here, they procure the milk from their sheep and create a fine, smooth, boisterous cheese from it. Smoked and sweet paprika is added to the cheese to impart its reddish-orange color profile.
The cheese is sharp and lactic thanks to the raw sheep’s milk, but it is also smooth and silky. The paprika adds a slight spiciness that cuts through the richness of the cheese. It is a well balanced cheese that can be enjoyed on its own, or sliced and matched with beautiful jamon and crusty, fresh bread.
Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. Soft cheeses with delicate rinds need to breathe, so they are best placed in glass containers lined with paper towels to absorb extra moisture. Leave the lid open a tiny bit for air to circulate and don’t forget to write up a label with the date you first opened the package. Kindly pay attention to the best before date label when you receive your cheese. Consume prior to date indicated.
