Piquillo peppers originate from Northern Spain. These peppers are sweet and are generally about 7cm in length. They offer a wide top with a pointed bottom giving credence to its name which, when translated, means little beak. These peppers have a sweetness to them and are not naturally spicy.
The peppers are usually stuffed with meat, seafood, and cheese (or a combination of these) and are served as tapas. Ortiz sources the very best piquillo peppers to be stuffed with the very best bacalao (dried and salted cod). These beautiful peppers come in a can and are canned in a delicious sauce. These peppers are ready to be eaten. Simply remove from the can, heat, and serve.
