These fabada beans are of the highest grade and are produced in small quantities. The hearty fabada stew of Asturias in northern Spain, Fabadas Asturiana, is made using these “fabes.” This hearty dish with cured meats and spicy paprika is well-known throughout Spain. The fabada beans must have a substantial, absorbing texture and a buttery flavor.
They were manually harvested in Asturias and that only the best undamaged whole beans were chosen. The beans are hand-planted along Asturias’ rich slopes and riverbanks. They take 150 days to develop, compared to 90 days for regular beans. They must be hand tied, husked, and dried in traditional horreos (wooden barns supported by granite poles). The end result is the world’s best fabada beans. This is vital because fabada beans absorb the rich, meaty flavors that chorizo and morcilla sausages bring to the broth.
