A wonderful pairing for this wine would most definitely be civet de lapin - a hearty winter dish from France that uses rabbit, red wine, bacon, mushrooms, butter, flour, carrots, onions, garlic and the blood of the rabbit. Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork.
