The Opus One has long been considered to be one of the best Cabernet Sauvignons to be created in Napa Valley. The first vintage was created in 1979 (and released in 1983) via a partnership between Robert Mondavi and the late Baron Philippe de Rothschild, who was considered to be one of the best winemakers in the world.
The Opus One is truly magical. It is bold and intense, thanks to the perfect growing conditions Napa Valley provides for Cabernet Sauvignon grapes. The wine presents smooth, mature tannins, a nice dryness and acidity that is slightly offset by a playful sweetness. To the eye: bold, intense, deep reds are presented. On the nose: Notes of dark fruits, spices, and a slight herbaceousness can be observed. On the palate: rich and smooth, the wine is more akin to silk than a liquid. It presents notes of blackberry, dark plum, licorice, and chocolate. It offers a deep, long, lingering finish that will persist a while after taking a sip.
Such a wine should first be tasted on its own. It does pair perfectly with grilled and braised beef and pork.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
