A quiet wine, this understated champion deserves more fanfare. This Ripasso will bring excitement to your pantry and wine-tasting sessions. This wonderful wine is, of course, produced utilizing the 3 main Valpolicella grapes: Corvina Veronese, Rondinella, and Molinara. What makes Ripasso so unique is the inclusion of leftovers from grape flesh and seeds during the maceration process.
The result is a bold, tannic, slightly sweet (offset by the inherent acidity of the wine), and soft wine that is a great way to finish off the day. To the eye: pinks and purples will massage the eyes. Violet hues shine through in the right light. To the nose: the same can be said for the bouquet - pink and purple flowers will assuage the nose. A veritable massage. On the palate: dry and fresh, with hints of chocolate and vanilla. Thoughts of red berries and fruits are also present.
This wonderful wine is great with steak and full-bodied main courses. Try pairing this with Steak Pizzaiola. This wonderful dish, served with sirloin steak, tomatoes, garlic, onions, and wine - to name a few - is the perfect, hearty stew to pair with this wine. It’s like they were made to be paired together.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
