This beautiful wine, produced by Castillo Perelada, is a blend of Syrah, Cabernet Sauvignon, and Samsó. Aged for 18 months Bordeaux barrels of Allier French oak (the remaining time spent in bottle), this excellent wine is not as powerful as other wines, but something one would sip and take their time with.
This is a thinkers wine. Something to sip while contemplating life and the world. It has a little less boldness than other wines from this winery, but the tannins and acidity are well-balanced. To the eye: A very intense cherry color greets the eye. On the nose: notes of ripe fruits with a rather spicy afterthought. On the palate: A long finish with notes of spices, black and red fruits, and an oakiness that shines through towards the end thanks to the aging in the barrels.
This wonderful wine is perfect to sip on an evening when people-watching or simply allowing one’s mind to wander. For a meal, a simple pollo al ajillo would work wonderfully with this delicate, introverted, wine.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
