Argentina is one of the most famous and important winemaking destinations in the world, especially when it comes to the production of Cabernet Sauvignon and Malbec varieties. The dry, warm climate is the perfect growing conditions for these grapes and produces rich, voluptuous samples. Coupled with the local’s winemaking know-how and the avid wine consumption traditions of Argentina, only the best is good enough for the discerning palates of Argentina.
This is no different for the Flechas de Los Andes - Aguaribay. A beautiful, full-bodied red, it is bold, with nice tannins, and a wonderfully refreshing acidity. It is fruit-forward and very easy to drink. To the eye: a medium ruby red shines through with beautiful purples in the right light. On the nose: notes of the earthiness of the region in which it is grown are noticeable alongside red fruits and spices. On the palate: Blackberries and raspberries are observed alongside oak and a multitude of spices. It has a medium finish and is very refreshing - perfect for a hot, summer afternoon.
Pairing this wine is easy. It complements red meat perfectly and works well with certain chicken and fish dishes too. As this is quite summery, our recommendation is a seared kangaroo medallion salad. Sear the kangaroo in a pan until medium rare. No more no less. Kangaroo meat is notoriously lean and is too tough, underdone, or overdone. For the salad base: cherry tomatoes, roquet, and goats cheese. For the dressing, Extra virgin olive oil blended with a spoon of dijon mustard, red vinegar, a spoon of honey, and ¼ cup orange juice. Serve salad cold with freshly cooked kangaroo.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
