Bodegas y Viñedos Casa Del Valle Acantus Red is delicious. It takes the king of grapes and marries it with a varietal that not only holds its own against the boldness and eagerness of Cabernet Sauvignon but enhances and complements the flavor profile with its own boldness and round, delicious tannins. If Cab Sav is the king of grapes, then Tempranillo is undoubtedly the queen.
As Grupo Bodegas Olarra is want to do, this particular wine is neither too bold, nor too light. This is in character for this winery who believes in tempering their wines. It is a dry-ish wine with a subtle sweetness that complements the acidity perfectly. The tannins are noticeable and soft - not overpowering or absent: just so. To the eye: a rather high intensity cherry color greets the eye upon viewing. On the nose: fruit-heavy notes are noticed along with a spattering of spices. On the palate: red fruits, such as plum and cherry are observed. Cloves and cinnamon are also notice, though only slightly so.
This delicious wine is best paired with tapas and light pork and chicken dishes. It works wonderfully with pasta - anything with a medium-light red sauce, such as puttanesca, al amatriciana, or simply marinara.
Store your unopened bottle in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 7 to 15°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
