Tumaka (tumaca) is a spread that gets its roots from the famous Catalan breakfast dish, pan tumaca. While originating from Catalonia, it is enjoyed by many people all over Spain. It is bread that is toasted and topped with juicy tomatoes and extra virgin olive oil. The traditional way of preparing this delicious breakfast dish is to pick a ripe, juice tomato, slice some crusty, rustic bread. Then, slice the tomato in half and press the tomato halves onto the bread. The juices from the tomato should soak into the bread leaving the bread deliciously soaked. Spreading some roasted garlic and olive oil over the top serves to further elevate this delectable breakfast.
