Just like with other ‘pure’ sherry vinegars, El Majuelo Sherry Vinegar Reserva is a product exported from the Capiz province in Spain, specifically from Jerez (hence the Spanish name for sherry vinegar, vinagre de jerez). This beautiful, dark amber liquid embodies the essence of the Palomina Fina grapes that are used in the creation of this fantastic pantry staple.
Unlike normal sherry vinegars, which are aged for 6 months in American oak barrels, El Majuelo Sherry Vinegar Reserva is aged for two years, and utilizes the Joaquin family’s traditional processes of criaderas and soleras for transferring the liquid gold from barrel to barrel. This helps impart more flavor into the vinegar and gives a far more satisfying culinary experience.
This wonderful vinegar is best used in salads and on red meats, but like with its balsamic cousin, it can be used with fish and chicken as well. A simple drizzle is more than enough to transport you to a world close to Nirvana.
Vinegar should be stored in a cool, dry, dark cupboard, away from the heat and light. Choose a spot in the kitchen that’s away from the oven. The best temperature for storing vinegar is from 13 to 21°C.
