It’s made with 100% pure-bred, acorn-fed Ibérico pigs who spend their days grazing on grass, herbs, and sweet acorns in the historic ‘dehesa’ countryside. This all-natural ham has been expertly matured in the mountains of Spain for over three years.
Because the hams are preserved with only sea salt and no nitrates or nitrites, you will only taste the pure flavor of Ibérico de Bellota. It has a bright color, and rich marbling. It’s soft and creamy on the palate, with a clean aroma.
Montaráz is a member of the DOP Extremadura, and an independent auditor inspects every step of the curing process, ensuring top quality always. The Montaráz family began their business more than 130 years ago, and have honored centuries-old salting and curing methods in natural drying sheds. They proudly only use salt and patience as their methods of preservation, passing down this skill through generations.
Serve the Montaráz Paleta Ibérico de Bellota in thin slices on a warm plate, to fully develop its flavor. It pairs nicely with bold wines from Ribeira del Duero, Toro, and Rioja.
