This beautiful product is made with 100% Iberican pigs which are fed acorns as the major part of their diet. The Iberican pigs are completely free range, allowed to roam and explore at their own leisure. The meat from the pigs is minced and then stuffed into natural casings.
This beautiful meat is allowed to shine through as the predominant flavor on the palate. Notes of nuts are observed due to the diet of the pigs. Afterthoughts of garlic and paprika are also present and help accentuate the wonderful quality of the meat used in the chorizo. It can be used in a variety of stews, but is best presented on a charcuterie board where its own natural flavor can be experienced, and enjoyed, on its own. It pairs well with a nice mahon or manchego where the sweetness of the cheese can compliment the inherent savoriness of the chorizo.
Pair this wonderful meat with a nice Tempranillo. If you’re looking to experience this with a beer, try it with a nice lager, like Estrella Galicia Especial or Ambar Especial Lager.
To properly conserve and extend the ham shelf life, store in a cool, dry place, with the ideal serving temperature between 17-22º C.
