Cocido Madrileño, simply known as cocido, is a hearty, well-loved stew hailing from Madrid. It is made with an assortment of meats, vegetables, and features the most important part of every ollas in Spain - chickpeas. This wonderful meal is usually served featuring the caldo first. The caldo is the stock resulting from the stew featuring the sumptuous flavors of the meat, and at times is served with sherry. The vegetables are usually served on the side, sometimes featuring the meat on top, or in another dish. It usually takes about 24 hours to make, as one needs to soak the chickpeas overnight.
