If you’d like to switch up your raclette experience, replace the traditional raclette cheese with Tomme De Chevre Gerentes (allow 200g per person) and add slices of tomato or cherry tomatoes, some fresh mushrooms, gherkins, slices of pear and finally, spices such as paprika, cumin, nutmeg. You can also add slices of Tomme De Chevre Gerentes to a potato stuffed with bacon bits for more creaminess and character.
If you are craving for a simple snack you may also use this cheese by adding it on top of toast, drizzled with oil. Heat in the oven for the cheese to melt and add a drizzle of honey and a few pink peppercorns, salt and pepper before serving. To be served hot.
Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. Soft cheeses with delicate rinds need to breathe, so they are best placed in glass containers lined with paper towels to absorb extra moisture. Leave the lid open a tiny bit for air to circulate and don’t forget to write up a label with the date you first opened the package. Kindly pay attention to the best before date label when you receive your cheese. Consume prior to date indicated.
