Delicious cured cheese hailing from the south-west of Spain, close to the border of Spain and Portugal.

The Don Mariano Curado ‘Sudao’ Queso de Cabra is a famous cheese in Spain that has been produced using the milk of serrana and retinta goats that are located to the south of Extremadura and Sierra de Aracena, these goats are known across the country for the softy, creamy cheeses they produce.

The cheese itself forms a natural, dark yellow crust. The cheese is soft, but firm and will not crumble in your hands easily. It has a pungent aroma, thanks to the raw goat’s milk used, that is reminiscent of grass, earth, and moss. It is slightly salty, thanks to the curing process, and delivers a sharp, tangy palate.

This cheese is delicious and can be used in a variety of ways. It works well as part of a cheese board or a charcuterie plate. It is perfect when used in salads and light pastas. It also works perfectly on its own with a nice Tempranillo, crusty bread, and some olives.

Storage Instructions

Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. Soft cheeses with delicate rinds need to breathe, so they are best placed in glass containers lined with paper towels to absorb extra moisture. Leave the lid open a tiny bit for air to circulate and don’t forget to write up a label with the date you first opened the package. Kindly pay attention to the best before date label when you receive your cheese. Consume prior to date indicated.
