Soignon Sainte Maure White Soft Goat’s Milk Cheese is a surface-ripened goat cheese named for its birthplace, a tiny village in France’s Loire Valley’s Touraine area. The rye straw that runs through the heart of the soft and delicate cheese is perhaps its most distinctive feature. Soignon Sainte Maure has a firm, mottled blue-gray rind and is fashioned like an elongated tapering log. The edible rind contrasts beautifully with the cheese’s brilliant white core, resulting in a nutty, somewhat acidic flavor with citrus undertones.

This cheese’s taste is exceptionally well-balanced, with a lemony acidity tempered by a buttery nuttiness. It is recommended to eat this cheese straight-up, in a salad, or on a crusty baguette with fig jam. When it comes to wine pairings, this cheese goes well with a Loire Valley wine. You can also go for a zesty, mineral white wine that is citrus-y in the palate or a crisp sauvignon blanc.

Storage Instructions
