Hailing from the Castellan region of Spain, sopa de ajo or sopa castellana is a hearty, simple dish made by the peasants and utilizing pretty much whatever food they had on hand. Due to the abundance of garlic, this simple clove became the main star of the dish and featured tough cuts of meat and eggs that would slowly poach in the garlic liquid over the course of hours, firstly over a stove, and then finished for the remainder of the cooking time in an oven.
